In today’s busy world, it can be difficult to eat healthy every day. In addition to our often hectic lifestyles, there are an endless number of restaurants and fast food chains temping us to grab a quick bite for lunch or dinner. These meals almost always contain far too many calories, and frightening amounts of salt, fat, or sugar. If you want to feel healthy, it is absolutely essential that you cook most of your meals at home yourself. Oven-cooked meals are a great way to cook your own meals. In addition to a wide variety of options, oven-cooked meals are relatively easy to make, since after the prep work is done you throw them in the oven and wait for them to be finished. The other great benefit of meals cooked in an oven is that they are typically able to be refrigerated and reheated days later. This means that if you are willing to spend a few hours on Sunday cooking several meals at once, you will be able to enjoy healthy lunches and dinners throughout the week. While there are literally thousands of over recipes available on the internet, not all of them are ideal for refrigerating and reheating. The following are a few ideas to get you started:

Parmesan Chicken and Caesar Roasted Romaine: This is a delicious and healthy option for chicken and Caesar Salad lovers. When making this recipe, remember that you’ll probably only want to save the chicken for reheating, as the romaine will become soggy in the refrigerator. For this recipe, you’ll need:

  • 4 7-ounce chicken breasts, skinless and boneless
  • ½ cup of Japanese breadcrumbs (also known as panko)
  • ½ cup of grated Parmesan cheese
  • Freshly ground pepper
  • Kosher salt
  • 3 tablespoons of olive oil, preferably extra virgin
  • A lemon, sliced into 8 pieces
  • 2 large romaine hearts
  • 3 tablespoons of chopped parsley
  • 2 chopped up garlic cloves

First, line a baking sheet with foil and preheat the oven to 450 degrees. Lightly season chicken with salt and pepper and place them on the baking sheet. Mix half of the garlic, parsley, olive oil, panko, and Parmesan cheese together, then add the mixture to the chicken. Put chicken in the over until the crumbs turn golden (approximately 10 minutes). Then lightly pour olive oil and garlic on the romaine, and place the romaine in the over with the chicken for another 5 minutes.

First, heat the oven to 425 degrees, then wash and chop the vegetables into bite-size pieces. Place the vegetables on the bottom of your baking dish, and lightly sprinkle your herbs, salt, pepper, vinegar, and olive oil on top of them. Rub the chicken with olive oil, followed by salt and pepper, then place them on top of the vegetables. Bake for about an hour, and you’re done!
