Bacon-Wrapped Dates

Recipe via Around My Family Table

What you’ll need:

  • 36 dates, pitted
  • 1 package of bacon, each strip cut into thirds
  • 1/2 cup cream cheese, softened
  • 2 tablespoons chives, finely chopped
  • Maple syrup, slightly warmed for brushing
  • 36 toothpicks, if desired

Preheat oven to 425 degrees Fahrenheit. Combine cream cheese and chives in a small bowl. Gently slice each date to separate the halves while keeping on side in tact to make a sort of hotdog bun effect. Use a small spoon to scoop cream cheese mixture into the center of each date and sandwich the halves together.

Take a small strip of bacon and wrap it around each date, securing with a toothpick if needed. Place bacon-wrapped dates on a foil-lined baking sheet. Brush each date with warmed maple syrup and bake for 10 minutes. Turn dates over and bake for an additional 10 minutes or until bacon is browned and crispy.

Spinach Artichoke Pinwheels

Recipe via Taste of Home

 What you’ll need:

  • 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained, and chopped
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • ½ cup grated Parmesan cheese
  • ½ cup mayonnaise
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • 1 package (17.3 ounces) frozen puff pastry, thawed

In a small bowl, combine artichoke hearts, spinach, Parmesan cheese, mayonnaise, garlic powder, and pepper. Unfold the puff pastry and spread the artichoke mixture evenly over each sheet to within ½ inch of the edges. Roll pastry over the artichoke mixture to create a rolled log. Wrap in plastic wrap and freeze for 30 minutes.

Preheat oven to 400 degrees Fahrenheit. Using a serrated knife, cut each roll into 12 slices. Place cut side down on greased baking sheet and bake for 18-22 minutes or until pastry is golden brown.

Stuffed Mushrooms

Recipe via The Pioneer Woman

 What you’ll need:

  • 24 ounces white button mushrooms
  • 1/3 pound sausage
  • 1/2 onion, finely diced
  • 4 cloves garlic, finely minced
  • 1/3 cup dry white wine
  • 8 ounces cream cheese
  • 1 egg yolk
  • 3/4 cups Parmesan cheese, grated
  • Salt and Pepper, to taste

Preheat oven to 350 degrees Fahrenheit. Wipe off mushrooms with a damp cloth. Remove stems and save both parts. Chop mushroom stems finely and set aside.

In a skillet, brown and crumble the sausage. Remove from pan and set aside to cool. Add onions and garlic to the skillet, cook for 2 minutes over medium-low heat. Add wine to deglaze pan, and allow liquid to evaporate. Add chopped mushroom stems, stir to cook for 2 minutes. Add salt and pepper to taste. Set mixture aside to cool.

In a bowl, combine cream cheese and egg yolk. Stir in Parmesan cheese. Add sausage and mushroom stems mixture, stir together and refrigerate until firm.

Carefully smear mixture generously into the cavity of each mushroom top, creating a sizable mound over the top. Bake on cookie sheet for 20-25 minutes or until golden. Allow to cool at least 10 minutes before serving.

Fried Mozzarella Balls

Recipe via Martha Stewart

 What you’ll need:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko or plain dried breadcrumbs
  • 1 teaspoon dried thyme
  • Coarse salt and ground pepper
  • 1 pound bocconcini (bite-size fresh mozzarella balls)
  • 2 cups vegetable oil
  • Tomato sauce, for serving

Preheat oven to 250 degrees Fahrenheit. Place flour in a large bowl. In another bowl, beat eggs. In a third bowl, combine panko (or breadcrumbs) and thyme. Season with salt and pepper. Dredge mozzarella balls in flour, shaking off excess, coat in egg, and roll in breadcrumbs, pressing gently to adhere.

In a small saucepan, heat vegetable oil over medium-high heat until a pinch of breadcrumbs sizzles and floats to the top when added. Fry rolled mozzarella balls, 4 at a time, until golden-brown, turning occasionally (about 2 minutes each batch). With a slotted spoon, transfer mozzarella balls to paper towels to drain and season with salt. Keep warm in oven. Serve with tomato sauce for dipping.

Goat Cheese Logs

Recipe via Country Living

What you’ll need:

  • 2 logs (4 ounce) goat cheese
  • 4 ounces cream cheese
  • 3 teaspoons aged sweet sherry
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 ½ teaspoons paprika
  • ½ teaspoon cumin
  • 4 teaspoons fresh parsley, finely chopped
  • 4 teaspoons fresh dill, finely chopped

In a small bowl, stir goat cheese, cream cheese, sherry, salt, and pepper. Shape cheese mixture into a log and wrap in plastic wrap. Chill in freezer until slightly firm (about 10 minutes).

In a small dish, mix paprika and cumin together. In a separate dish, mix together parsley and dill.

Remove cheese log from the freezer, unwrap, and slice in half. Spread paprika-cumin mixture on 1 sheet of parchment paper and parsley-dill mixture on another sheet. Roll 1 log in paprika-cumin mixture, and the other in the parsley-dill mixture.

Serve logs with pita, roasted crostini, or crackers.

Pesto Chicken Flatbread Pizza

Recipe via Meals

 What you’ll need:

  • 2 Tuscan-style flatbread (about 3.5 ounces each)
  • ½ cup pesto
  • 2/3 cup sautéed or cooked chicken breast, cut into strips
  • 2 tablespoons mozzarella cheese
  • ¼ cup shredded Parmesan cheese

Preheat oven to 375 degrees Fahrenheit. Place flatbreads on a baking sheet and spread pesto sauce evenly over each flatbread to within ½ inch of the edges. Top each flatbread evenly with chicken, mozzarella, and Parmesan.

Bake for 8-10 minutes or until flatbread is crisp and cheese is melted.

New Year’s Eve Fortune Cookies

Recipe via Just aTaste

 What you’ll need:

  • 2 egg whites from extra large eggs
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • ½ cup all-purpose flour
  • ½ cup sugar
  • Handwritten fortunes

Preheat oven to 350 degrees Fahrenheit. In a large bowl, whisk together egg whites, vanilla, cinnamon, flour, and sugar to form a loose batter.

Using a small spoon, scoop about 1 tablespoon of batter onto a parchment-lined cookie sheet. Use the back of the spoon to smooth the batter into a very thin, circular layer. You will need to be patient and only bake cookies in batches of 1-3 as they will harden too quickly later when you try to shape them. Bake the cookies for 5-7 minutes or just until the edges of the cookies begin to brown.

Remove cookies from oven and place handwritten fortune over the center of each cookie. Use a flat spatula to carefully release the cookie from the cookie sheet and fold it in half over the handwritten fortune. Then, pinch the edges of the folded cookie inward to create the fortune cookie shape. Work quickly because all will harden within 30 seconds of being formed.
