Sweet Potato Veggie Burgers

A perfect combination of flavors and textures, this sweet potato burger is a great alternative to a traditional beef burger.

What you’ll need:

  • 2 cans cannellini white beans
  • 2 cups of sweet potato, baked/peeled/mashed
  • 2 Tbsp tahini
  • 2 tsp maple or agave syrup
  • 1 tsp lemon pepper seasoning OR Cajun seasoning
  • 1/4 cup wheat flour
  • Panko crumbs
  • Safflower oil for pan

What you’ll do:

Bake sweet potato. Peel, place in large mixing bowl. Add drained beans to mixing bowl. Mash beans and potato together. Add in seasoning, flour and any additional seasoning. Form a patty. Add more flour or a scoop of breadcrumbs.

Heat 1 Tbsp of safflower oil in a pan over high heat. Cook patties in pan until browned on both sides. Transfer cooked patties to paper towel. Cool for a few minutes.

Serve on toasted bun with toppings of choice.

Black Bean Burger

Black bean burgers are chock full of protein, making them the perfect burger alternative for vegetarians.

What you’ll need:

  • 15 ounces black beans, drained and rinsed
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ⅓ cup instant oats

What you’ll do:

Preheat oven to 400° Fahrenheit. Grease a cookie sheet. In a mixing bowl, mash black beans with a fork until mostly pureed leaving some bean parts. Stir in condiments and spices until well combined. Then mix in oats. Form into 4 thin patties. Bake for 7 minutes on each side.

Serve on a bun with condiments of your choice.

Salmon Burger

Love fish? Try this delicious salmon burger that’s not only delicious, but a great source of omega 3 fatty acids, which are ideal for a healthy immune systems.

What you’ll need:

  • ¾ pound wild salmon
  • 2 scallions
  • ¼ cup breadcrumbs
  • 4 oz chopped smoked salmon
  • Salt to taste
  • Sesame Buns
  • Spinach
  • Mayonnaise
  • Mustard

What you’ll do:

Dice the 3/4 pound wild salmon; puree half with 2 scallions. Add the breadcrumbs and smoked salmon to the remaining wild salmon and form into 2 patties; make an indentation in the centers.

Sprinkle a cast-iron skillet with salt and place over medium-high heat.  Cook burgers for 4 to 5 minutes on each side. Serve on sesame buns with sauteed spinach and mayonnaise mixed with mustard.

Turkey Burger with Peaches and Blueberries

Turkey burgers are a popular, low calorie alternative to the traditional beef burger. But we’re sure you’ve never had one quite like this.

What you’ll need:

  • 4 small peaches
  • 1pound ground turkey
  • Salt
  • Ground black pepper
  • 4 slices Monterey Jack cheese
  • ½ cup blueberries
  • ¼ teaspoon chili powder
  • 4 thick slices roasted garlic country bread

What you’ll do:

Mix ground turkey, salt, and pepper with 2 peaches finely chopped. Form 4 patties. Grill uncovered over medium-high heat until browned. Add cheese; cover and cook 1 more minute.

Meanwhile, chop remaining peaches. Cook peaches, blueberries, and chili powder in a large skillet, stirring occasionally, until heated through and juices begin to form.

To assemble top each piece of bread with one turkey burger followed by the peach mixture.

What you’ll need:

  • 400g can chickpeas, rinsed and drained
  • 1 chopped garlic clove
  • A handful of parsley

  • 2 tbsp sunflower oil
  • Pita bread
  • 200g tub tomato salsa, to serve

Pat the chickpeas dry with paper towels. In a food processor process the onion, garlic, parsley, spices, flour and salt. Blend until smooth, form into four patties.

Cook the burgers in a non-stick frying pan with oil until browned.

What you’ll need:

  • 1 (6 ounce) can tuna, drained
  • 1 egg
  • 1/2 cup Italian seasoned bread crumbs
  • 1/3 cup minced onion
  • 1/4 cup minced celery
  • 1/4 cup minced red bell pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons chili sauce
  • 1/2 teaspoon dried dill weed
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 dash hot pepper sauce
  • 1 dash Worcestershire sauce
  • 4 hamburger buns
  • 1 tomato, sliced

What you’ll do:

Mix the tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Shape  mixture into 4 patties. Refrigerate for 30 minutes.

Cook patties in a non-stick skillet coated with cooking spray; it should take about 3 minutes per side. Serve on buns with tomato slices and lettuce leaves.

Cook the onion and carrot in the water until tender. Combine cooked onion and carrots with lentils, water, parsley, tomato paste, bread crumbs and salt to taste. Form into patties and cook on lightly oiled pan until browned on both sides (should take around ten minutes).
